Cocktail Fridays: Mele Kalikimaka Mai Tai

An overly complicated Polynesian Tiki cocktail on Christmas? Sure, why not.

Recipe (makes two drinks)

  • 1.5 oz Gold Rum
  • 1.5 oz Spiced Rum
  • 1 oz Orange Curacao
  • 1 oz Orgeat
  • 2 oz Lime Juice
  • 1.5 oz Pineapple Juice
  • 1.5 oz Cranberry Juice
  • 0.5 Simple Syrup (2:1)
  • 6-8 drops 'Elemakule Tiki Bitters
  • 1 oz dark rum (floated)
  1. Fill two glasses with crushed ice
  2. Add gold & spiced rum to both glasses
  3. Shake the rest of the ingredients and split between the two glasses
  4. Float 1 oz dark rum

Our normal tradition is irish coffees on Christmas morning, which is always nice.

  • French press coffee
  • 1-2 tsp. Sugar (depends on bitterness of coffee)
  • 1.25 oz Tullamore Dew Irish Whiskey (you don’t want too much)
  • Top with heavy cream that has been aerated in a glass jar via 2-3 minutes of shaking
  • It’s critical that the foamy cream is ice cold, I stick it in some ice for at least 10 minutes, you need the juxtaposition of hot sugary whiskey coffee and ice cold thick cream.
