How I understand it: The canal is 3 wide.
First fill a portion of the canal like a checkboard (or chess board, whatever), whith every other box a cobble stone block.
Then fill the left most row with water in the non cobble stone boxes (1x1 box of still water surrounded by cobble).
Then mine away the cobble checkboard, starting from the left. You can mine a bit into the leftmost row, then mine a bit into the center row and then mine the rightmost row, and repeat.
The water flows into the checkboard boxes and becomes still.
The optimal number of players is around 3 I think, two with a bunch of buckets and one with a dimond pick to mine away the checkboard. A couple of other players can go ahead in front and plop down the cobble checkboard.
