Yes! There's a lot of stuff on the service that I never snagged back when they were actually available and I've been too lazy to pirate them since. Gothic 1 and 2 in particular were awesome finds on the service and I wound up loving them to bits. Likewise, I remember reading about Screamer but I never got around to playing it until I bought it on GOG and many of the other ones I've bought have provided me with hours of entertainment on my laptop while traveling for work/pleasure.

Why would you assume that something not sold at retail has any demand? Of course there's a demand for it, or else you wouldn't be tripping over warez sites hocking the games whenever you did google searches for 'em. Tell all of the Planescape: Torment and System Shock 2 fans that there's no demand for those games and see how they react.
Most of the games are quality older games that just aren't commercially available or supported by their original publishers anymore. GOG takes it upon themselves to secure distribution rights to make the games commercially available (at extremely attractive prices), ensures that they're made compatible with modern operating systems (something that publishers like Lucasarts couldn't care less about), and then bundles in neat bonus stuff on the side (original high resolution wallpapers, avatar icons, pdf manuals, soundtracks, promo art, whatever). They even provide continuing support for the product (they identified and fixed a soundtrack error in the Redneck Rampage collection that existed even on the Gamefest release).
So what if they're charging a couple of bucks? The stuff they offer is well worth it.
