I want to pimp Dwarf Fortress because the new version is out and it rules!
Here is the website for the game: http://www.bay12games.com/dwarves/
And the Dwarf Fortress wiki: http://www.dwarffortresswiki.net/index.php/Main_Page
Dwarf Fortress is an ascii-based strategy game with a ton of complexity and depth. Think sim city meets Lord of the Rings meets Nethack. It has quite a steep learning curve, like many ascii games, but the bit of effort required to play the game is well worth it. There is also an adventure mode that's much closer to a traditional rogue-like.
There are many cool things about Dwarf Fortress so I'll share only one of my favorites: at the beginning of the game, Dwarf Fortress procedurally generates the entire world. So at any point you can start a whole new, randomly generated world with its own geography, ecology, myths, and civilizations. Awesome!
For those who have already tried DF, they just released a new version and it has a lot of great additions. For one, they've added a new dimension to the game (literally) - you can now toggle between different height levels, allowing you to build fortresses up and down through mountains. The new version has completely reinvigorated the game for me. I recommend everyone try it! I should also mention that this is an alpha, and is totally free.

There are 2 main modes:
Dwarf Fortress - is a Dungeon Keeper / Evil Genius type game in which you indirectly control a bunch of dwarf who are setting up a new dwarven fortress/city. You can tell them where to dig, what to build etc., but if they decide that are too hungry or thirsty or sleepy, they will eat, drink or sleep before getting to the dig job. This is all in a 3D environment with different area types (lakes, rivers, forest, plains, mounains, etc.)
Adventurer - is similar to nethack and other rouge-like game. Here you as a single human, elf or dwarf adventurer exploring the dwarf fortress world. You can visit your former fortress or explore other areas. battles include ranged and melee weapons, and wrestling moves. You can put a creature (or be put your self) into an arm lock (assuming you have enough skill) and break bones and joints. Dismemberment, with accompanying ascii graphics are also featured. Adventurer mode isn't as fleashed out as fortress mode is yet, but it is playable. A quest system (that is ignorable) will eventually be added to give some direction to the mode.
Big features:
* A generated world with terrain and backstory/history/legends of the civilizations that exist in it.
* the generated world can be used for many games / fortresses / adventures. The actions take on one game show up as stories / legends in later games.
* attention to detail and the extraordinary amount of actions / things you can do / build in the game.
