I want to pimp Dwarf Fortress because the new version is out and it rules!
Here is the website for the game: http://www.bay12games.com/dwarves/
And the Dwarf Fortress wiki: http://www.dwarffortresswiki.net/index.php/Main_Page
Dwarf Fortress is an ascii-based strategy game with a ton of complexity and depth. Think sim city meets Lord of the Rings meets Nethack. It has quite a steep learning curve, like many ascii games, but the bit of effort required to play the game is well worth it. There is also an adventure mode that's much closer to a traditional rogue-like.
There are many cool things about Dwarf Fortress so I'll share only one of my favorites: at the beginning of the game, Dwarf Fortress procedurally generates the entire world. So at any point you can start a whole new, randomly generated world with its own geography, ecology, myths, and civilizations. Awesome!
For those who have already tried DF, they just released a new version and it has a lot of great additions. For one, they've added a new dimension to the game (literally) - you can now toggle between different height levels, allowing you to build fortresses up and down through mountains. The new version has completely reinvigorated the game for me. I recommend everyone try it! I should also mention that this is an alpha, and is totally free.

I've been playing the new version all week. I have my fortress for 4 years, but I think I ran into a crash last night because it crashed and when I loaded the save game (turn on seasonal save in the init.txt]y) it crashed about the a month into summer (about the same is the last time). Also, I'm one of those people how the game runs slowly for, so I turned down the graphical fps and keep the menu and map open all the time so that there is less drawing. In the first year I would get 60+ fps outside but only 20-30 inside, but in the fourth year with 88 dwarfs and about 150 animals, I really can get more than 20 fps anywhere.
There actually is a 3-D view shift-V, but it isn't too useful yet as it only works outdoors currently.
Biggest changes:
* no guaranteed cave river, chasm, magma river
* farming is much easier (assuming you have sand, loam or clay)
* no need to build a road to the trade depot (just clear (no rocks or trees) a 3 wide path to it), and a mode to show you the trade depot's accessibility
* Nobels actually do work!
* need a dwarf to trade (and that it is a low priority for him, causing you to have to remove most of his jobs to get him to trade :( )
* multiple levels, with stairs and ramps!!! (the map extends from 15 levels above the highest ground level to 15 levels below the lowest ground level of an area)
* You can start at any location in the world may that you want, but some starting areas are much easier than others (lack of wood, or water, etc).
