I had the exact same problem, and many others have it as well. Never mind the "it works fine" people. It doesn't, not for many of us. And yes, it's absolute bullshit Bethtesda doesn't fix it. "Win7 is not supported" for a few year old game will make me think hard in the future when considering buying their games. I managed to reduce the crashing to almost zero by following these steps:

It requires a bit of effort, installing FUSE and then that. As a bonus, GFWL will not be running on the backfround when you play it this way. Some have claimed it's GFWL causing some of the crashes. Note that you will need to copy your save games if you wish to continue from them, as the "non-GFWL"-version of the game uses a different directory for the saves.

I also did some other stuff which I can't remember, but I don't think it helped much. These two steps seemed to do the most good. After I got done with the tweaking, I went from several crashes per playing session to maybe one per 5-10 hours of game time, or less.
