Get to the choppa!

So you want to fly the choppers in Bad Company, eh? Ideally I would keep this information to myself, as I have a blast flying them, and this guide will diminish my chances for a run in the pilot's seat. But then, I also hate jumping in a chopper to operate the guns, only to die in a flaming mess 5 seconds later. So here goes.
There are 4 main axes of movement on the choppers in Bad Company 2: SPEED, PITCH, YAW, and ROLL. These are summarised in the following picture: http://www.shackpics.com/files/apachediagram_t71gqpwlzuo0z8ogzrby.png
Ideally I would have preferred a pic from above for that middle pic, but how long do you expect me to google for 'Apache schematics' before I get a wiretap on my phone?
Roughly:
* SPEED controls the thrust provided by the rotors. If you're level, all of this thrust will go towards providing you vertical lift. If you PITCH or ROLL the helo, you trade some of this vertical lift for movement in the specified direction. For example, PITCH UP (pushing the nose of the chopper down) and you will move forwards, at the cost of some of your altitude.
* YAW rotates the tail of the chopper, essentially spinning the helo around the axis of the main rotor.
We'll get into the specifics later, but this is a good enough understanding for now. First we need to set up the controls in a way that we like.
