The easiest comparison is to load both games (or demos I guess) back to back. You should be able to see the difference in grinds right away. You'll slow down a lot faster grinding on obstacles parallel to the ground in skate 2, even when moving at a decent speed. If you try to grind up an inclined rail, it will stop you almost immediately unless you have a ton of speed, in skate 1 you just slowly come to a stop or grind the whole thing if you do have enough speed.
Flatland tricks are another giveaway. Try doing flatland 180's and 360's in both games. In skate you can almost pop high enough and spin fast enough to do a flatland 540. In skate 2 you turn slower and land faster, lucky if you can do a 360, I don't think I have yet.
All these simple things add up into the game feeling different I guess, but better and more realistic, which is why I enjoying the sequel that much, even with all the faults still carried over from the first and a few new ones to boot.
