After some discussion, I decided to try to make a script that, at certain intervals, shuts down and brings back the server automatically in order to avoid crash-induced roll-backs. By default, it does this every 2 hours, but it can be easily edited in the script by changing the "restartInterval" value.
This means:
1) Hopefully less crashing due to idlers not causing excess strain on the server and
2) A fallback point to prevent loss of work beyond, at most, 2 hours.
With python installed, throw this in the same directory as your minecraft_server.jar file and double click/launch it from the command prompt. This launches the minecraft server and, every two (or however many) hours, brings it down for saving and immediately brings it back up again. All in all, there's a total downtime of about 10-15 seconds. At five minutes, the server warns players that the restart is coming so they can finish stuff up and again with one minute left.
The launch parameters are just ones I found somewhere, so be sure to edit the java command within the file to exactly what you usually launch with. If your server takes more than 10 seconds to shut down, due to the size, edit the number in the last line of the program to control how many seconds the program waits after calling "stop" to start the server back up.
I've tested this a decent amount, but let me know if there's anything different you want.
