What is "filthy rich" to you? There's a pretty wide variety of players, from newbies to oldbies on server 1. I'm in the middle, leaning towards the older category now. If I have less than a million of something it's sort of off-putting. One of the guys in my alliance is a top 10, and he gives away 10-50-100k archers whenever one of us gets attacked ("what is a lot of archers to you? I'll send them."). I'm running about -30k to -100k / hour food in most of my cities, and I buy a meg of food once or twice a day, in addition to the occasional NPC raiding. I like to have at least 3M food on hand, though the rest will vary. I've recently run out of gold because I started researching some quicker things that were just as expensive, and I had decided to pay my heroes in gold rather than medals to get their loyalty up, since I thought I had so much at the time. Oops.
The best advice I can think of if you're going for a one-city approach is to constantly raid NPCs to get your hero's level up. Get your highest int hero and pump that up as high as you can get it. If you can, attack with just soldiers; don't bring along workers, siege, or transports which'll slow you down. Making that hero your Mayor when you start a research project will cut down on a lot of time.
On the same note, get a politics hero for making buildings and an attack hero for building troops.
Ten barracks is a pretty good number, but you might run into problems with running out of idle villagers to turn into soldiers, rather than resources. With that in mind, though, I guess you could turn down your production from 100% if you're not doing anything with it and don't want to just sell it.
As far as fortifications go, I'd recommend a thousand abatis or so to prevent someone from constant-scout-raiding you (abatis kill scouts if they attack without dieing themselves. Don't know why).
