The monetary is a huge consideration though, and it's quite likely that I'll have to consider some sort of halfway house between cooking and consultancy if I even did commit enough to leave my job in the future and do it. Not to mention that as matto pointed out in his "do you want to be a chef" post, there are more jobs in the industry than just the back-breaking chef work but you often need to have some of that experience in order to get there. So, again, I'm cognizent of the fact that I may have to put in a disproporationate amount of effort to reach where I am now in terms of pay in another industry, but then... I've spent 8 years getting here and I fucking hate it.
Regardless of that, I am well aware of the differences between hobby and work and the associated glamour of celebrity chefs, let me assure you that it doesn't bias me in any way whatsoever. I couldn't give a fuck about the celebrity nature of chefs. At the moment, my mind is on food and the kitchen, I'm just curious as to whether or not that translates to a profession or not. But thanks for the advice.
