UE3 uses all 3 cores of the 360 (basically the PS3's PPE), and does heavy, heavy streaming off of the disc due to lack of a hard drive.
So, the presumably multithreaded renderer needs to be rewritten, sound/AI offloaded onto the SPEs, and the hardest part -- determining the best streaming solution because the Blu-Ray drive is extremely, extremely slow. Remember that UE3 maps can be too large for system memory so they need to be streamed in on the fly. They can use HD cache but at the same time it's a much harder problem to tackle when you're streaming data from multiple sources like that.
(that is, loading on the fly of a given map instead of loading the whole thing into memory at once)
