I've said it before, I can't emphasize it enough, you have to LET GO of the need to finish every game you start. You want to have fun playing Dark Souls or ZombieU or Spelunky or AC3 or whatever, it's not that hard to do:
Just Be In The Moment.
Don't think about how far you've gone or how much farther there is to go, don't worry about whether you're making progress, and for the love of whichever god floats your boat, stop treating your lost progress as a waste of time! It's not like you're being any more productive when you do finish games. It's just a game, try to enjoy the journey.

Focusing on the end doesn't have to limit your enjoyment, but to hear someone like Jeff talk of a game like ZombieU as being enjoyable but too stressful to play, I'd say that his enjoyment is being limited.
I've seen gamers burn themselves out completely trying to complete every game in their backlog, to the point where they don't enjoy playing games at all anymore. Likewise for people who burn themselves out on trophies and achievements. (read this: http://savestatex.blogspot.ca/2011/04/addiction-unlocked.html) Maybe it's a symptom of the kinds of forums I choose to frequent, but I can't stand seeing this happen to people.
Perhaps a better example are fighting games. I'm a scrub. I was a scrub in 1991, and not much has changed since then, and it's probably gonna stay that way for a while yet. If I let that bother me, I'd never play fighting games again. Maybe I wouldn't feel like I was missing out, but in the past couple years, since I've given up worrying about these things, I've discovered games and even entire genres that I now love, that I previously would not have touched. Things like bullet hell shooters, or hardcore dungeon crawlers like Etrian Odyssey, roguelikes, or Monster Hunter for that matter.
As a side note, I also wanted to offer an argument that wasn't "well if it isn't challenging, how do you expect to feel any sense of accomplishment." because I hate hate HATE that argument. It's bullshit.
