If all you buy is Darck Crusade, you can only play Tau and Necron in multiplayer. All 7 races' singleplayer is open to you, however.
If you own Dawn of War + DC, you can play Tau, Necron, Space Marines, Eldar, Orks, and Chaos Space Marines in multiplayer.
If you own Dawn of War + Winter Assault + DC, you can play all of the above and the Imperial Guard in multiplayer.
I'm not sure if Winter Assault will install without Dawn of War, and no one from Relic has said what would happen if you tried to install DC and then WA to just get the Imperial Guard.
