Ability to sort by many different fields.
Dozens of fields for metadata, which helps organize your music many different ways.
Complete tag editor, including lyrics and artwork.
You can change independent settings for individual songs to play at different volumes, equalizer presets, or even stop/start at a different time.
Smart Playlists, which let you create ways to filter your music by any metadata.
Create playlist folders to further organize your playlists and smart playlists.
Seamless handling of compilation albums, so you can still keep the same artist names, but compile them together under the same album.
Instant search results. Let your music be organized by iTunes, it will automatically rename and move your music to your library folder, organized in their own folders, etc.
Automatic album art grabbing (from the iTunes store).
Genius playlist creation, pick a song, click genius, and it creates a new playlist filled with songs "similar" the one you choose. Great way to re-discover music you haven't heard in awhile in your library.
iTunes DJ, which lets you "queue" up songs you want to hear (or randomly grab them from whatever playlist you choose). If you are hosting a party this is really useful, other people can "request" music by using their iPhone. Lots of different options for how this works, including automatically adding the song to the iTunes DJ list.
Perfect integration of Music Videos and PDF Album booklets. You can put them in the same music albums, so if you have an album that has music videos and a nice PDF scanned in copy of the booklet, it organizes perfectly into it.
I could go on, but i'm starting to get to the features that are not related to organizing music, but to be fair those extra features are what really sell the app for most people, like the iTunes store.
