Morning Discussion: Holiday Edition

The plan is:
Rice: 1 cup of water boiling, then I dump 1/2 cup of the rice in there, and add a touch of salt. Then put the lid on the pan and reduce heat to a simmer. Let that go, stirring occasionally until the water is all gone and the rice is ready. Let this get going for a few minutes while I prep the rest of the stuff...
Mahi Mahi:
Put about 1 tablespoon of olive oil in a pan on med heat till it starts to pop and bubble, then put the fish in... its already "seasoned" according to the package, but I might try putting some lemon juice and some pepper on the top side. Let that initial side cook for about 5-6 minutes until its golden brown, then flip over and do the same.
about this time put some of the frozen broccoli into a cup w/ some water and a lit and mircowave that for about 3min or so till its all steamed up.
About the time the fish is done (and I know its done because if I put a fork in it, it should flake nicely), the rice should be about done ... add a little bit of spray butter and enjoy.
Does that sound about right or is going to be a total disaster? Any suggestions?
