AC3 will be not be in the Animus, since Desmond has learned how to be an assassin in AC2. This means that AC3 about Desmond being in the war against the modern day templars (the people who kept you in AC1). Modern cities, in exploration, all the features of AC2 put into modern day. This does have the flaws to this. Guns as an addition would bring back repetitiveness. Tall building would make freestyle climbing boring and guns used on you will be annoying.
More realistic suggestion, Japan, in the time of ninjas, u are a still an assassin just a bit more ninja looking. It would be perfect. Ninja stars used. It would be kinda like NINJA'S CREED.
But thinking bout it they cannot use guns anymore than they are now, unless enemies used guns as much as Ezio does.

The next really cool step would be to put it into 30-years-War Germany (1618-1648). It's more of a logical evolution, as there are still plenty of bladed weapons, but firearms are slowly gaining importance. Also, you would have all these warring factions in one country, the French, the Austrians, the Protestant states - and you in the middle of the war.
Not to mention that it is a completely underused time period.
