When I poured it today, roughly 1 month from the initial brewing it was a side pour in a cup and I was left with probably 1/3 a cup of beer and 2/3 of foam/head whatever. It was almost like pouring soda and the taste was really carbonated. It still has a certain taste, but I swear I can't identify it, does the mega amount of head lead to any conclusion on what I may have fucked up?
There is a brew shop about 30 minutes away(I got this from a supplier that doesn't know anything about beer, they just have it, great, but bad for troubleshooting) I think I'll take a beer and see if they can tell me wtf is up if they are willing to try it. But I thought I'd throw this out there for one last shot before I try again with the no rinse sanitizer. It doesn't taste like a wheat at all anymore, but it doesn't have a flavor of any other style I've tried, if I had to pick something I'd say Sam Adams Ale watered down with too much carbonation. No 'cardboard, bandaid or wet cardboard' I can identify. The amount of sugar was exact and mixed in after a boil into the bottling carboy with the correct sugar type... so I can't see it being the type or the amount causing this.
I did some googling and it seems that the one week of fermentation before bottling is a bit early maybe? And this may be key, when I had it out to bottle, I did notice the airlock bubbled a few times, maybe 3 times I caught in an hour? Could early bottling cause so much chaos? I'll leave you brewers alone and consider myself a failure or inventor of a new flavor after this, it's just I want to get started on the next batch asap without fucking it up again.
