The project starts as an idea, so you don't always know what you are getting yourself into.
If you run your own business, you are not going to be making promises about what you are going to deliver to the public.
You don't have to and you just don't need the stress if things go wrong and you cannot live up to those promises.
As a developer, taking a big risk, you simply will refuse to work like that.
It will not get done any quicker anyway, so there is no point.
The way that you have to think of it, is that the longer it take to develop, the better the end product will be.
